Chives are often confused with green onions, but are an entirely different species. These thin, hollow, green stocks can be identified by the small purple flowers they produce. But once picked and trimmed, chives are a wonderful addition to make culinary foods.
Use chives to add a mild onion flavor with a tiny hint of garlic. They are delicious in baked goods but their subtle flavor shines through when left uncooked. Chives can be used raw as a garnish over items such as deviled eggs or omelets. Add them to fish, salads, sandwiches, soups, sauces and potatoes just before serving.
